Not mentioned in the above is that the soy consumed by the Okinawa Centenarians is carefully prepared by natural fermentation processes. Please avoid the industrially prepared and altered soy products that are pervasive of just about every processed food on the planet nowadays. Such forms of soy are considered by an increasing number of experts to be an "anti-nutrient". Please refer to the article here which pretty much sums up what I am saying about soy.
